I would like to know what parts I need to make a talking robot head

It depends on how you want the head to be but the essentials would be a microcontroller and some audio synthesis modules. For example, an Arduino, the Cytron Easy MP3 Shield and a speaker, and of course the power source. And If you also want speech recognition you could use the EasyVR 3 Plus Shield instead of the MP3 shield.
The rest will depend on how you want the head to look like, maybe you want it to have a screen as a face, like this robot, or maybe you want something more realistic like this one. If you want the eyes and the mouth to move like the last one you will need some servos and you could take that example as a guide and use aluminium sheets for the structure of the head too but there are other materials you could use as well like cardboard, wood, plastic or maybe you want to 3D print it, it’s totally up to you (but maybe this tutorial might help you out with the choice). Finally, I suggest checking the complete How to Make a Robot tutorial series since it is a great guide for beginners and it covers many aspects of the whole process.
