Looking for a device to spin a rotisserie with variable speeds, it would be for a typical BBQ two chickens or a roast. The idea is if you spin the meat faster the juices stay on the meat and not fall into flames below.

I think the best option would be using a DC Motor, or perhaps if the chickens are heavy a Gear Motor (higher torque).

Also, because of the type of application, you might want to check the IP rating and the operating temperature.
To control it you could use a DC Motor Controller, as I guess you’d like to control it manually a good option would be using an Analog Voltage DC Controller so you can use a potentiometer to adjust the speed.
