But what is the difference between the two?
And Does anyone know how to interface it to the Basic Stamp 2?

Looking at the datasheet, it says the only difference is the address of the chip. The PCF8574P has an address starting with 0100 but the PCF8574AP has an address starting with 0111. It won`t affect how the chip works in the slightest, unless you have more than 8 chips.
