The specifications from the strain gauge amplifier are good to work with, especially if you are using an Arduino UNO board – as already stated in the datasheet specifications from the website you posted. I will suggest that you work with what you have. You can measure the voltage output of the gauge – using a very sensitive voltmeter – at the rated maximum load, then adjust the amplifier’s gain with an external resistor. You can learn more about working with amplifiers and strain gauges here: https://tacunasystems.com/knowledge-base/. Ensure that whatever output you get, it should not exceed what the microcontroller/processor can handle as an input.
The links to the schematic in this post are broken. I could really use a schematic for this board so that I can figure out which pin is pin1 on the MTA connectors.

Assuming that the square pin is pin 1 when I ohm it to GND I measure 2.5K Ohms. The 4 the pin in this assumption when ohming to GND is 0.0 Ohms. So I think the square pad is pin 1.
