If I had more than one receiver (possibly quite a few !) Could I use a single large transmitter plate to charge multiple receivers ?

The transmitter coil characteristics is related to the electrical specifications of the transmitter module (material, length of wire, coil diameter, number of turns…). Changing the coil with any plate most likely won’t work and it will void the manufacturer’s warranty.
