I know that the sensor says you can solder additional wire to the board to increase the overall touch area, how does that effect the sensitivity through materials? i.e. Is it still 1/2" of material or can that be increased?

Attaching an object to the capacitive touch sensor by soldering a wire on the metallic pad will increase the size of the touchable area.
The 1/2" is the proximity detection distance of the sensor when placed near to an object (The sensor can work as a touch sensor or a proximity sensor with 1/2" detection distance).
This value won’t increase when soldering an additional object to the sensor.

Thanks for the response. I have another question, can the sensor work with Gilderdfluke controllers?
The Phidgets Touch Sensor has an analog interface with a supply voltage of 2V to 5.25V.
It should work with controllers with 5V analog inputs.
As we don’t provide Gilderfluke controllers, we can’t guarantee that it will work with touch sensor. This has to be tested.
