What am I missing from this list to get a rover moving. Besides a battery, chasis, wheel, etc. I’m looking for missing cables, rc receivers (I’m presuming the roboclaw can handle directly) mounting hardware, etc.

You have an interesting project 
So, according to your choice, BILDA Element-6 Radio Control System, you will receive both transmitter and receiver. You will need several AA batteries for this because these are not included.
Also, according to the photo of the motor, you will need following cables:
And in the end, you will need some kind of hub or a coupling to connect motor shaft to the wheel.
