Micro controller Interfacing With sensors and motors

For interface with micro controller some sensors use interface circuits and some sensors (ir sensors) don’t want it. For interfacing motors some motors want motor driver (stepper motors) some motor don’t want(servo motors) it. What is the reason please explain.
