Measuring vibration in paper

I need help deciding what to use for my project of being able to use multiple sensors to measure the vibrations when they are applied to paper, or a like material. I cannot find anything on the internet about how sensitive the sensor needs to be to be able to measure with a high level of accuracy when measuring vibrations in paper.
I would like to be able to use the Phidgets Sensor Interface Kit 8 / 8 / 8 or something like it, and bring the sensors in via Analog and be able to plot the magnitude of the vibration on a graph. Any suggestions?

You might try a distance sensor, an accelerometer or vibration sensor. We have not tried such an experiment, so it’s up to you to find out which sensor works best.
