Image tracking wheel speed and ground speed

In a mobile outdoor robot, is there a way to setup a high speed camera over one of the wheels looking down. The camera would have a clear view of the wheel and the ground beside the wheel. And from this I would like to track the wheel speed and ground speed (tracking separately to compensate for wheel slip). The wheel and ground are quite textured.

And advice would be appropriated!!

Could you use a shaft encoder on the motors for wheel speed and since it’s an outdoor robot, use a GPS for robot speed?

Thanks bmoscato. This is a prebuilt vehicle and I am having a hard time getting an encoder on it. As it functions under heavy tree cover I was trying to find a GPS alternative.
