Hi are you able to connect 2 of the URM07 - UART Low-Power Consumption Ultrasonic Sensors together to be able to sense left and right at the same time

Yes, but your microcontroller has to have at least two UART ports (2 Tx, 2 Rx), or if you have an Arduino you could try using software serial. The other option would be using I2C sensors instead.
