I am not new to software development but completely new to robots. I am looking for fully stand-alone servo devices that require only power and then are controlled (after configuration, of course) entirely via Bluetooth or even WiFi, with APIs that can be run under a central controller. Cost of each device not all that important. Any help much appreciated!

I’m not aware of any stand-alone servos that can be controlled without a servo driver (but there might be some out there and I just don’t know about them). Either way, I think you should look for a servo controller that allows you to control the servos via Bluetooth or Wifi. Some options that come to mind are:
That allows you to control the servos with the SSC-32 Servo Sequencer
And has an Xbee socket
Or if you need smart servos you could use the LSS servos and the adapter board to which you can add an XBee (for wireless control)
And you can control the servos using the LSS Config software
