I already have a set of these castle esc and am wondering if they will work just fine for my vtail. running 900kv motors.

They will work for a VTail application but you need to look at your motor specification to be sure you are in the safe zone for Amp.
A VTail is just like a normal Quadcopter but with a different shape and mixing table.
