what size esc do you recommend for the t motor 2212 1100kv motor

You need to know which size propeller and LiPo you are going to use for your setup in order to choose.
There is a full chart on the product page that show the motor consumption in relation to the Propeller and the number of LiPo cells.
With our setup, we suggest 12A esc’s with 8" propellers and 3s LiPo.

With that setup of Propellers and LiPo, you better go higher in Amp as you will be very close to the 12A of the ESC.
You might be safe, as you mostly never go 100% throttle and the ESC is capable of 15A burst but go for a little higher.
The 18A is a better choice for that, but you need to provide/solder your own connector or solder without connectors.
Even safer with the 30A
