Is there an adapter or a separate hubdisk available for this? Looking at the Datasheet I see it can fit shaft diameter .07-.25". The hubdisk in the kit is .25 but I need to fit on a .188 shaft

Unfortunately, there are no separate hubdisks available in RobotShop. However, you could contact the manufacturer and ask if they sell it separately from the kit.
