Can a spectrometer detect organic matters?

Hey ,
I was wondering if a spectrometer can help detect organic matters like food wastes and recognize them as one category?
Is it possible?

i read all the articles you mentioned
but i don’t know if what works with microscopic compounds in water and rocks would work the same with bigger masses like food wastes, a banana peel for instance?
i know this might sound dump but i really appreciate your help!
