I need to build a 600 - 900 rpm turntable platform to hold a GoPro camera, battery and wireless video transmitter.
I’m wondering if a brushless motor like the ones used in drones would be workable.
It seems they spin quite a bit faster than that, but perhaps the ESC can slow them down to what I need?

There are many ways to this project.
First thing is the mechanical aspec as you will not connect the camera directly to the motor. Most system will have gears or belts and the weight will need to be evenly distributed (balanced) as well.
Brushless motor used in the R/C industry are rated in “KV” which is a RPM per Volt ratio.4
Example: A 1000KV motor powered at 12V will give you a maximum of 12 000rpm.
So you will have to find a motor with a low KV and battery that match your need.
