Arduino load cell 300 KG compatibility

For a artistic project, I need to get a force sensor that must measure the hit of a mass shot by a man at arm’s length. (300 kg max I think)

I want to receive a signal from 0v to 5v to be processed by an Arduino.

Can you tell me a simple solution that I could buy at home?

The thing with load cells is that they lose precision if you try to register some data too far off the rated load.
For exemple the https://www.robotshop.com/ca/en/500kg-s-type-load-cell.html load cell is rated at 500 kg but you will lose some precision if you try to register some loads too far under that.
What kind of precision do you need?
