I am about to buy the AS5600 magnetic encoder which costs only £3- £4. The problem is I need to attach that to a brushless motor however most brushless motors do not have a shaft that comes out both ways, which would allow me to 3d print an attachment and mount my magnet on to. I don’t want to open the motor to get the job done so I’m wondering if anyone knows an easy fix to my problem.

those two motors you’ve linked us, are not comparable. The second is much bigger and is most probably not suitable for gimbal/encoder-setups.
The first motor has no option to mount the magnet ring on the back of the motor. Maybe you can extend the shaft of the housing? (replace the screw nut with a cylindric magnet-holder?)
