This is my first foray into motors at this level, so I wanted to clarify something on the spec sheet.
Here's what I'm looking for - A tilt/pan kit that can go at least 180 deg on the x axis, and from 0 to 90 deg on the y axis. It would be controlled by a Raspberry Pi or an Arduino. Movement should be bi-directional on both axes.

Reading the info sheet for it ( https://www.robotshop.com/media/files/pdf/servomanual-31422s.pdf ) it says:
Direction of Rotation All Hitec servos turn Clockwise direction ( CW ).
Here's the dumb question - Does that mean the servo can only turn in one direction i.e. clockwise, and I'm looking at the wrong type of motor if I want it to be able to turn both ways?
You got me there with the AoV. I know what it is in terms of photography, no idea how it is used with motors… Specs can be hard to read at times, but they’re not usully too ambiguous.
Granted, the motors are not an that expensive, but I’d rather get the right stuff from the getgo
I think it is the same in photography. Attach an arm to a motor and make it rotate. Face to motor from different angles. From some it will appear CW and from others CCW. The rotation didn’t change, just your brains interperation.
The direction of rotation is related to the pulse. Almost all standard (180 degree) Hitec RC servos associate 500us with -90 degrees, 1500us with 0 degrees and 2500us with +90 degrees. Therefore as you increase the PWM width, the servo rotates CW as viewed from above. This is not always the case with other manufacturers and can even be reversed for programmable servos.
