Take your Atmega, add an X-bee and a pot. Take a second Atmega, add a LCD screen and an X-bee.
Write code to transmit the values of the pot from one Atmega to the other and display them on the LCD.
If you can do this, you have pretty much built your remote already.
Oh yeah, I should mention…
The Atmega remote is going to cost you easily 4 or 5 times more than you can buy one for.
