I was wondering if anyone knows how to hack the HS-485HB to get it to rotate 360 degrees but still act as servo instead of a motor.

Invent a potentiometer that rotates up to, but not beyond 360 and replace the one in the servo.
Use 2:1 gearing to give you more rotation, and put a pot on the output shaft.

You might consider the HS-785HB winch servo for extended turning range. Also note that it appears to have a unique continous rotation feature I previously wasn’t aware of.
